Heavy Seas Black Cannon Back For Year 2

Heavy Seas Brewing’s Black Cannon is making it’s second appearance.  Built on Loose Cannon, with a darker malt base.  A boat load of Black Cannon casks have shipped out into the wild.  Be on the lookout for one in your market soon.

The style is an oxymoron but this ale is an extension of our Loose Cannon style brewed with black malt.

Style: Black IPA
Hops: Warrior, Simcoe, Palisade
Malts: Black Wheat, Pale, Caramel, Munich

Taste Expectations: Piney & floral hops. Roasty malt backbone.  Touch of coffee.  Smooth
Availability: 12oz/6pks. Draft. Seasonally January — March.

Renowned Las Vegas Chef Matt Seeber Joins Staff

 BALTIMORE, MD — Heavy Seas Alehouse will officially open to the public February 15, 2012.  The 4,900 sq. ft. space is located at The Tack Factory, 1300 Bank Street and will serve lunch and dinner and open daily at 11:00 a.m.

 An exciting addition to the Baltimore culinary scene will be Chef Matt Seeber.  Seeber was the Executive Chef at the flagship Tom Colicchio’s Craftsteak at the MGM Grand for 6 years before settling in Baltimore.  The restaurant received many awards and commendations during Seeber’s tenure as Executive Chef including the prestigious AAA 4 Diamond Award, Michelin Guide, Sante, Mobil and inclusion in John Curtas’ “Eating Las Vegas: The 50 Essential Restaurants”.  Seeber has over 25 years of experience in the hospitality industry including a term at the famed New York City Gramercy Tavern and certification as a Chef Instructor from the French Culinary Institute.

“I’m excited to be cooking focused and bold flavored food that pairs well with Baltimore’s own Heavy Seas Beer,” stated Seeber.  “Baltimore at its core has a long standing love affair with beer and we look forward to making an impression on the scene and raising the bar on the brewhouse experience.”

Vince Cassino has been named General Manager.  As GM, Cassino brings with him a wealth of experience in the Baltimore restaurant arena.  Former assistant GM of Sisson’s Federal Hill, Cassino reunites with the team that started brewhouses in Charm City.  Cassino brings an exceptional commitment to both employee and guest satisfaction that ensures a phenomenal experience for all guests.

“I’m very excited to be back in Baltimore City,” said Cassino.  “I believe in the exceptional quality of the Heavy Seas brands and continually promoted them even in the post-Sissons era.  I can continue to do so, coming back full circle to where it all started…the great city of Baltimore.”

Initial Details: Heavy Seas Plank II

Had a little chat with the southeast’s most popular beer bachelor from Heavy Seas Brewing, Kevin Fox.    Looks like the Baltimore based brewery has finalized details about their second Plank release.   Just a recap – this series was announced in early 2011.  Plank is a  brand new experiment by Heavy Seas showcasing unique wood aging treatments to add nuance and flavor to the beer.  Each beer is allowed time to age on the wood during secondary fermentation.   Plank I was an old ale aged yellow poplar – the first aged on that kind of wood.

That brings us to Plank II.  It will be a doppelbock, aged on roasted eucalyptus and poplar.  Heavy Seas has found that different head treatments applied to the wood changes the flavor profile, thus changing the beer.  Hallertau hops will be used in this brew.  (Brewing begins in January.)

Heavy Seas Year In Review

Heavy Seas LogoHugh Sisson, Founder of Heavy Seas has had yet another successful year.  In 2011, the brewery added 10,000 square feet to the brewery, and expanded into a new brewhouse.  2011 saw the addition of 4 new fermenters and 31,000 barrels of beer produced in their home of Baltimore, Maryland.  (That’s 961,000 gallons or beer! Or, 123,008,000 pints, or 10,250,666 bottles.)  New releases included Black Cannon (Black IPA), Dubbel Cannon (Belgian IPA), Plank I, Arrsh Red, & Hop Harvest.

Heavy Seas announced the addition of the Heavy Seas Alehouse, opening in 2012.  Going forward, the brewery will redefining the focus the brewery in 2012.   (The setback of growing pains.)  Hugh writes:

…2011 was also a very hard year. The growth we experienced was certainly accompanied by growing pains. We need to catch our breath a bit and make sure that we’re running the race for distance, not for speed. We’re preparing to improve not only the infrastructure of our physical plant (the bottling line, the brewhouse, etc.), but also our personnel and IT infrastructure. We’re redefining the mission of the company to make sure we stick to doing the things that make us special.

That said, in 2012, we’ll continue to focus on our cask conditioned real ale program. Our cellarman, Stephen Marsh, has collaborated with restauranteurs and bar managers up and down the East Coast on firkins, and we are going to pursue this project with even more energy.  

Hugh hinted during Atlanta Beer Week this year that there will be some changes to their offerings in 2012.  The first changes will be announced in January.  Just a side note.  I got to spend a few evenings have beers with Hugh Sisson.  He’s quite entertaining, extremely nice, and very involved in what he does.  If you get a change to have beer with him in 2012, be sure to do so.  (Thank goes for southeastern rep Kevin Fox too, lol.  Happy New Year bro!)  [HeavySeas]

Heavy Seas Ale House Comes to Baltimore in 2012

Convenient to Harbor East, Little Italy, Fells Point, and the Inner Harbor in Baltimore, MD will be the new Heavy Seas Ale House.  The new restaurant concept was developed by Heavy Seas Founder Hugh Sisson and his step son, and restauranteur, Patrick Dahlgren. 

The restaurant will have a pub feel with a 40 foot long dark wood bar, flat screen tv’s, and an outdoor beer garden.  The Ale House will offer first class food and a raw bar.  There will be 8 Heavy Seas beers on tap with specialty beers and casks.  Growlers will also be available.  Heavy Seas Ale House is expected to open in early 2012 and will serve both lunch and dinner.
