Jester King begins farming on 58 acres [Gallery]

Earlier this year, Jester King Brewery (Austin, Texas) announced they had purchased 58 acres of land around the brewery for land preservation. As of this spring, the brewery is farming said land.

To date, the brewery has planted plum and peach trees, blackberry bushes, and a melon patch. Additionally, the brewery has planted a test plot of wheat, in hopes of being able to one day grow the grains (and fruits) used in the brewery’s beers.

Jester King is very tied to the local terroir, using wild caught yeast and bacteria to ferment their expansive wild and sour lineup of beers. The logical next step is growing the fruits, vegetables and grains for future releases.

Work is already being done to maintain an avoidance of unnatural fertilizers and pesticides, as well has efficient irrigation systems.

Ron Extract & Amber Watts to depart Jester King

Ron Extract and Amber Watts, two big players in Austin, Texas based Jester King Brewery, will be departing. The goal is to open a brewery of their own in rural Washington state.

While we at Beer Street Journal tend not to repost press releases, below is the story from Jester King of the change.

 

It’s with bittersweet sentiment that Michael Steffing and I mention that Ron Extract and Amber Watts are leaving Jester King to pursue their career goal of opening their own brewery! Ron and Amber will have more details of their own to share, but they plan on establishing a brewery in rural Washington in the months ahead.

Ron and Amber have meant a great deal to Jester King over the years. Ron joined Jester King during the brewery construction phase and was instrumental in helping shape the creative vision of the brewery. He initially reached out to Michael and me about potentially distributing our beer, but the conversation soon changed to how he could benefit Jester King directly by partnering with us and lending his wealth of experience in sales and distribution, as well as in the beer industry in general. Michael and I were very fortunate to have someone with Ron’s experience and knowledge as our partner. Having no prior industry experience ourselves, Ron was able to connect us with people and organizations that accelerated the growth, awareness, and reputation of the brewery. Ron of course also worked very hard at helping push through the package of bills that allow Jester King to pursue its current business model. Prior to 2013, Jester King could not sell beer at the brewery. Now our business depends and thrives on people having the legal ability to buy beer to drink at our tasting room or take home. Once we had the legal right to sell beer, Ron helped make Jester King a preeminent destination location for beer in Texas, and what Michael and I consider to be one of the best locations for beer in the world. On top of that, Ron has done an exceptional job representing Jester King at home and abroad, creating many valuable contacts for us along the way. We know Ron to be one of the smartest, most patient, and overall reasonable persons that we’ve encountered.

Amber has helped us tremendously in a multitude of areas over the years. She initially volunteered her time in the tasting room before ultimately helping manage an entity that essentially puts on a major beer festival every weekend. She took over brewery reporting and government compliance upon coming onboard as a full-time member of our staff, which helped across a number of departments. She helped elevate the onsite experience at Jester King by organizing some of the most wonderful events we’ve ever been associated with, including the Salty Sow beer dinner, 2015 Funk n’ Sour Fest, the all-Dichotomous beer dinner, and “2015” Zwanze Day. She also brought us the fun and successful Alamo Drafthouse Rolling Roadshow screenings. Amber represented Jester King very well both at home and abroad, and was highly helpful and reliable as one of our tour guides. I personally thank her for her help with communications, and we’re excited to see her express her excellent communication skills, both written and verbal, through the platform of her new business.

While Ron will be leaving Jester King, he remains a shareholder in the company. Knowing his reputation for helping others in the industry, I have no doubt he’ll gladly help everyone at Jester King in any way he can going forward. We are very excited about the new chapter in their professional lives, expect them to succeed magnificently, and are excited to see the knowledge and experience they’ve gained over the years translate into an exceptional business of their own!

Jester King Hibernal Dichotomous 2016, a sour blend

Jester King Hibernal Dichotomous 2016

Jester King Hibernal Dichotomous 2016 releases on Friday, May 13th.

This edition is a blend of old and young beer, a method the brewery refers to as bière de coupage. The young, fresh beer is a farmhouse/wild ale brewed with dried Genmaicha tea, and winter rosemary.

The old beer is from the brewery’s stock of Funk Metal, a sour barrel aged stout.

Jester King Hibernal Dichotomous 2016 is available in 750 milliliter bottles when the brewery opens on Friday, May 13th.

Style: American Wild Ale (w/ RosemaryGenmaicha tea. Partially Barrel Aged.)

Jester King Fantome Del Rey (Texas Edition) release day

Jester King Fantome Del Rey

Jester King Fantome Del Rey, the Texas edition and follow up to the 2014 Fantome collaboration releases today.

The Texas edition of Jester King Fantome Del Rey is a blend of old and young barrel aged beer. (AKA Bière de Courage.) The older piece of this blend is the 2014 edition from 2014, brewed with barley, dark candi syrup, coriander, and black peppercorns. That beer was fermented in stainless steel with truffle honey before headed to oak barrels.

Sadly, thanks to restrictive beer laws in Jester’s home state, the beer couldn’t be released there.

In 2015, Jester King brewed the young edition of the collaboration, and blended it with the old.

Jester King Fantome Del Rey (Texas Edition) will be available by the glass, and to-go in 750 milliliter bottles when the tap room opens on May 6th, 2016.

Style: Farmhouse Ale (w/ Peppercorns, Candi Sugar, Coriander, Honey. Barrel Aged.)

Jester King Cloudfeeder, a collaboration with Tired Hands

Jester King Cloudfeeder

Jester King Cloudfeeder, a new collaboration with Tired Hands Brewing will be available April 29th.

The farmhouse ale is brewed with Texas grapefruit and limes, plus Pennsylvania honey,  and dry-hopped with Nelson Sauvin and Simcoe hops.

The approach to this recipe was to create a lower alcohol by volume beer, fermented with a mix of brewer’s yeast and wild/sour mixed culture, and tastes like an India pale ale. Simply put, right now the beer is more bitter than sour. Time will change this beer as the little microorganisms see fit.

As we’ve pointed out before, farmhouse ales were historically either very bitter or sour. On occasion, as we did with Cloudfeeder, we used a combination of hops, fairly high fermentation temperature (78F), and the absence of long-term aging, to create a beer that’s bitter and not particularly sour/tart — at least not yet.

Even the label is a collaboration, created by Jester King’s Josh Cockrell in collaboration with Jean Broillet IV of Tired Hands.

Jester King Cloudfeeder will be available on tap at the Austin, Texas brewery starting April 29th, and around the upcoming Craft Brewer’s Conference in Philadelphia. Bottles will be available shortly after.

Jester King Multifarious, a collab with 18th Street

Jester King Mulitfarious

Jester King Multifarious, a new collaboration with 18th Street Brewery (Gary, Indiana) releases this Friday.

The duo brewed the beer at Jester King’s farmhouse brewery in November of 2015. The base beer is an oatmeal stout, nuanced by the addition of smoked malt, and a of wild yeast and sour bacteria.

It was brewed with the mindset of creating a beer that is subtle, succinct, and above all — drinkable.

This collaboration is created with the idea of high quality brewing with restraint. A simple, subtle, yet very inviting beer. This stainless steel fermented beer was bottled in January, and has been bottle conditioning since then.

750 milliliter bottles of Jester King Multifarious will be available at when the tap room opens at 4 pm on March 25th.
