Bayou Teche Boucanèe
Bayou Teche Brewing (Arnaudville, LA) Boucanèe is a year round offering. The smoked wheat beer is inspired by cherrywood smoked meats of Louisiana.
LA-31 Boucanèe is our acknowledgment of the importance of the wild cherry tree to south Louisiana. Using cherry-wood smoked wheat we craft a surprisingly delicious and unique ale. A cold glass of Boucanèe enhances the taste of many local dishes, whether smoked or not. At our brewery, we enjoy pairing it with chicken and sausage gumbo, barbeque, sausage po-boys, and grilled hamburgers. We can no longer even look at a link of boudin without instinctively opening a cold bottle.
Bayou Teche Boucanèe is available in 12oz bottles and draft.

Tennessee isn’t making it easy to be a craft brewer. In fact, taxes per gallon breakdown for craft beer over “college” beer is almost 1/3 more. Thus – The Beacon, a Tennessee High Tax Ale. Yazoo Brewing (Nashville) and Calfkiller (Sparta, TN) created a smoked wheat ale that hits shelves around Nashville today.

Jester King Salt Lick: Wood Smoked Saison
Jester King (Austin, TX) continues to push the flavor boundaries with Salt Lick, a smoked saison. The beer is a collaboration of sorts. A portion of the malt was smoked over pecan wood at Salt Lick BBQ in Driftwood, Texas.
First came the witches, and soon after there were vampires. They came in droves and each time one popped up it seems to be better looking then the last., each polished to a blinding luster. For a brief moment even werewolves even had there moment in the spotlight, plucked and preened to studio perfection. Then, to our astonishment, monsters comprised of nothing more than smoke joined this pop phenomenon – and that we couldn’t resist.
