Dogfish Head Noble Rot Uses Grape Fungus

Dogfish Head Brewing has plans on bottling Noble Rot, a beer they have been developing over the last year.  Rot uses a few wine making techniques.  Those that are winos, here’s the breakdown.  Grape Must.  Must is fresh pressed grape juice, that contains the skin, juice, seeds, etc.  Noble Rot- where the beer gets it’s name, come from a fungus called  Botrytis cinerea.  Botrytis is a good fungus, that will infect or grow on the grapes when they are ripe.  (If they stay moist, grey fungus can destroy the crops.) Botrytis on dry ripe grapes that start to raisin (reduces water content) are hand picked to make very sweet wine.   To make Noble Rot Ale, DFH took Botrytis infected Viognier grape must from Alexandria Nicole Cellars in Prosser, Washington.   The fermentable sugars for the beer comes from the must.   The brewpub edition of Noble Rot included red winter wheat, grown and malted near Sam Calagione’s home in Massachusetts.

We brew this unique, sorta-saison with a little help from our friends at Alexandria  Nicole Cellars using botrytis-infected Viognier grape must.  This “noble rot” magnifies its complexity and long finish.

Flavors?  Yeasty. Funky, with grape flavors. Tart. Slight fruit.

Cigar City and The Bruery Dos Costas Oeste” Variation #2.  Saison is brewed with coriander, ginger, and sweet orange peel.  Aged on lemon wood spirals.  Variation #1 – Cedar Spirals.  Variant #2 – Grapefruit Wood.  Variant #3 – Lemon Wood (above.)

Dos Costas Oeste is the result of a collaborative brewing effort between Cigar City Brewing of Florida’s Gulf (West) Coast and The Bruery of Placentia, CA. Like the breweries involved with its creation, this ale cheerfully meanders off the beaten path.  Join us in celebrating this West Coast to West Coast collaboration.

Cigar City and The Bruery have another collaboration coming out, following Marron Acidife – ”Dos Costas Oeste.”    Translation: Two West Coasts. (Bruery in Cali, Cigar City on Florida’s west coast in Tampa.) The saison is brewed with coriander, ginger, and sweet orange peel.  Aged on cedar spirals.  Above is Variation #2 – aged on grapefruit wood spirals.

Notch Brewing Saison Promoted

Notch Brewing’s Saison has been promoted to year round status.  This saison (or Worker’s Beer) is a mere 3.8% ABV.  Starting in 22oz bottles was a way to test the demand for a low abv session saison.  6-packscarry a higher packaging cost.  With such a positive response, the promotion is now official.  Saison launched in June, 2011.

Brewed in the traditional Saison style of Belgium, this is the classic farmhouse beer. Originally brewed by farms to slake the thirst of seasonal workers (les saisonniers), this refreshing beer had a lower alcohol content that is not often seen in today’s modern Saison. Notch returns the Saison to its roots, not only in alcohol content, but by using local ingredients much like the Belgian farmers. The wheat used in Notch Saison is malted by Valley Malt in Hadley Massachusetts.

Hops:   Mt Hood, Styrian Goldings
Malts: Pils, Red Winter Wheat, Oats, Belgian
Yeast:  Belgian Saison Yeast

Availability: 22oz bombers, Draft through 2011. 2012 – 12oz bottles.

Darkest Hour Belgian Imperial Stout.  Summit Hops  Brewed with molasses, brown sugar & Italian black licorice. Double barrel aging: Rye Whiskey & Pinot Noir barrels. 13% ABV & 33 IBU’s.  December Release.

Anchorage also is debuting (or debuted at this point) Anticipation Imperial Stout, 9%.  A collaboration with Gabe Fletcher of Anchorage, and Sleepy Lady Brewing.

The above beers join Bitter Monk & Love Buzz Saison, and Whiteout Wit.
