After speaking with Heavy Seas founder Hugh Sisson, he was happy to report that the yeast finally cooperated, and Yule Tide was produced. The plan it to release a 1 year vintage of Yule Tide this winter in addition to the 2011 vintage. Instant vertical!
About Yule Tide: Slightly sweet with a complex malty flavor. The spicy flavor comes from our unique blend of Trappist yeast and Belgian candi sugar – making it both aromatic and flavorful. It will benefit with aging up to two years.

What You Need To Know:
Plank I is an English ale, aged on yellow poplar wood during second fermentation. Apart from the wood being different than most other used for beer aging, the yellow poplar has been specially treated also. Simply, heat was applied to the wood. The application of heat changes the flavor and chemical makeup of the wood. Heavy Seas describes to wood “astringency” as flavor providing to beer as hops.
There was a preview of Plank I at the Extreme Beer Fest in Boston, Massachusetts last weekend. A close to 4,000 gallon batch is planned to be brewed at the end of March.

Over a year in development, Plank boasts a new and revolutionary way of adding wood to the brewing process. The beer is allowed to mature on the wood during secondary fermentation. Combinations of many different woods, beer styles, yeasts and aging times were tested. We quietly gathered feedback at pint nights featuring Heavy Seas firkins containing ‘mystery wood’. Outside taste testers gave their reviews and a final recipe was written to bring out the unique essence of this wood.
Plank is the first beer to ever use yellow poplar. Prepared in a not so traditional way, it will change the how you perceive wood-aged beers. A revolutionary thermal process releases the compounds in the wood through controlled heat in a way that “toasting” cannot do. This thermal process can be applied to any species of wood, creating something truly unique. Have we created an entirely new genre for wood-aged beer? You decide.
Over the coming weeks we’ll be sharing more about this innovative way of wood aging beer and the crew who developed it. Plank I will be the first, but not the last of its kind as we continue to explore the possibilities. Watch for its release in the Mid-Atlantic area in time to celebrate American Craft Beer Week in May. Plank will join the Mutiny Fleet portfolio of beers available in 22oz bottles and very limited draft.

Heavy Seas Brewing in Baltimore, MD is bottling Holy Sheet! today. Last year Holy Sheet got a promotion to bombers in the Mutiny Fleet.
According to their Facebook Page, today is bottling day. As you can see by the pic, I’d assume that beer is pretty fresh. Sheet is a Belgian strong dark ale. Heavy Seas calls it “Uber Abbey Ale.” My fond memories are drinking about 5 glasses of it on St Paddy’s day a few years ago. March 18th was magical.
