Almanac Wakatu Sour has joined the brewery’s Farm to Barrel Series. Wakatu is a New Zealand created hop variety; a relative of the Hallertau hop.
Almanac Wakatu Sour is a single-hopped sour blonde ale, aged in wine barrels for six months. The barrel result was blended with a younger, 100% Brettanomyces fermented beer.
This blend combines the oaky, vanilla character of the barrels with tropical, pineapple and guava-like flavors created by brett, and highlights the fruity tangerine and lime aromas of Wakatu hops.
Almanac Wakatu Sour is a 375 milliliter bottle offering.

Bruery Terreux Imperial Cabinet has just debuted, a collaboration with Austin, Texas based Jester King Brewery.
Imperial Cabinet is a barrel-fermented farmhouse ale, inspired by the New Orleans Ramos Gin Fizz cocktail.
Since the cocktail uses gin, which has a strong botanical flavor, rosemary, lavender, juniper, and cubeb pepper were added to the boil along with dried orange blossoms. The beer’s tartness and acidity grew over the 10 months in barrels.
During the final weeks, orange peel, lemon zest, lime zest, and vanilla beans were added to the barrels.
Bruery Terreux Imperial Cabinet was fermented with a blend of both brewery’s mixed cultures used for wild fermentations.
Due to pathetic Texas laws, Bruery Terreux Imperial Cabinet will not be sold in Jester King’s home state. Bottles debuted in the Bruery tap room on October 30th.

The brewery created Almanac Saison de Brettaville by starting with their Saison Delores, and added 12 different strains of Brettanomyces. After aging in white wine barrels, the beer was dry-hopped with Hallertau Blanc, Mandarina, and Mosaic.
The result is a farmhouse ale that is more funky than sour, with nuance that only brett can create. Serve with soft, creamy cheeses or as a tangy counterpoint to rich charcuterie.
Almanac Saison de Brettaville is available in 375 milliliter bottles.

Breakside La Tormenta was a very popular small batch offering released in early 2014, prompting a wider release. This sour ale uses a blend of citrus-y, tropical hops that offset the strong sour notes of this beer.
Notes of blueberry, guava, grapefruit, and lemongrass are offset by a juicy acidity, medium body, and a moderate sweetness from caramel malt.
Breakside La Tormenta is available in 22oz bombers, and draft.
