Jester King Ambree Returns, Recipe Scaled Back

Jester King Ambree Farmhouse Amber Ale, Batch 3 is returning once again, a bit different from the original release.

Earlier batches of Jester King Ambree used as many as eight malts, and a special decoction mash (taking part of the wort out, boiling it in the kettle and adding it back to the mash). For Batch 3, the recipe has been simplified using three malts, then fermented with the brewery’s mixed culture of yeast and bacteria.

The alcohol by volume is lower to, down to 4.5% from the 7% range.

Our initial inspiration for Ambrée came from some of our favorite farmhouse ales from French Flanders, notably the beers brewed by Brasserie Thiriez in Esquelbecq, France. But for the third batch, we looked much closer to home for inspiration: Live Oak Brewing Company in Austin.

Jester King Ambree is available in 750 milliliter bottles the brewery’s tasting room, and though out Texas.
