Jester King Hibernal Dichotomous 2015, March 27th [PICS]

Jester King Hibernal Dichotomous 2015 is ready to go. The brewery’s winter saison is the fourth seasonal Dichotomous released by the Austin, Texas brewery.

Jester King Hibernal Dichotomous 2015 heavily influenced by the winter season, from fruits or vegetables additions, to how it is fermented.

This round of Hibernal was brewed with December, 2014. Peeled and grated raw beets from Johnson’s Backyard Garden were added to the mash, and orange juice and zest from G and S Groves and fresh thyme from Pure Luck Farm were added to the whirlpool. While fermenting in stainless steel, the brewery added more of each six weeks later.

Jester King Hibernal Dichotomous 2015 will release on Friday, March 27th. The brewery plans to release and distribute around 3,500 bottles.

Jester King Reposé, Brewed with Hay

Jester King Repose, a farmhouse ale brewed with hay, and hanged in French brandy barrels, is ready to debut.

Repose was inspired by the hay filled barn where Jester King stores their aged hops. In true Jester King fashion, the brewery attempted to recreate the sensory experience of the barn.

How do you make barn beer? Hay. Bales of hay. Jester King added hay bales to the mash tun, and aged hops from burlap bags (seen below).

Stylistically, Jester King Respose resembles a French biere de garde. Brewed in February, 2014, the beer was slowly fermented and barrel aged until it was bottled in January of 2015.

Jester King Repose will debut on Friday, February 24th in 750ml bottles and draft.

Jester King & Prairie Create Natural Union [PICS]

Jester king Brewery and Prairie Artisan Ales have teamed up on a new collaboration dubbed Natural Union.

Chase Healey of Prairie joined Jester King’s head brewer Garrett Crowell in Austin, Texas back in August for this brew day. Natural Union is brewed using locally sourced ingredients from Texas and Prairie’s Oklahoma home. Healey brought rosemary from Oklahoma, and Crowell chose lemon bee-balm going in a nearby Texas pasture.

The boiled wort was fermented in oak for three months, using brewer’s yeast, and bacteria from the local air and wildflowers nearby.

Jester King/Prairie Artisan Ales Natural Union will be available in 750ml bottles and draft starting Friday, January 16th. Chase Healey will be on hand at the brewery for a special release celebration on January 17th.

Jester King Autumnal Dichotomous Arrives Friday [PICS]

Jester King Autumnal Dichotomous is ready for release. The seasonal driven saison is brewed during the mentioned series, and oak aged until the brewery feels it is ready.

Autumnal Dichotomous (fall saison) is brewed with butternut squash and acorn squash, long pepper, and sage. Head brewer Garrett Crowell smoked the squash and peppers over oak staves.

“I’m very inspired by nostalgia, and the smell of burning leaf piles is perhaps my most nostalgic memory of fall. The subtle smoke and spice character in the beer reminds me of those dim-lit autumn afternoons, running through the neighborhood and the smell in the air.”

Jester King Autumnal Dichotomous was brewed in October, 2014, oak aged with local wild biota, and re-fermented long term in bottles and kegs. The beer will be available in 750ml bottles, starting on January 9th. Other seasonal based offerings include Jester King Estival Dichotomous, and HIbernal Dichotomous.

Jester King World’s Worst Twin Releases January 16th

Evil Twin Brewery (Denmark) and Jester King Brewery (Austin, TX) have teamed up on a unique, barrel aged beer, World’s Worst Twin.

The beer is inspired by Evil Twin’s Jeppe Jarnit-Bjergso favorite coffee. Only, the brewers didn’t use coffee in World’s Worst Twin. Instead Jester King and Evil Twin used highly kilned malts were used in the mash. This imparted a roasty, chocolatey character, and Texas blueberries in the fermentation to provide some fruity notes and acidity. World’s Worst Twin was matured in oak barrels with native yeast and bacteria.

World’s worst twin is inspired by favorite coffee of our friend Jeppe Jarnit-Bjergso of Evil Twin Brewing. If we just added it to the beer, the subtle nuances of this delicate coffee would have been hopelessly lost. Rather, we sought to re-create it’s flavors and aromas in our own unique way through wild fermentation in oak barrels with blueberries and wort brewed with Rich toasty malts.

Jester King Evil Twin World’s Worst Twin will be available in 750ml bottles starting January 16th, at 4pm. Brewery release only. Those in Austin, Texas and catch Jeppe at Jester King for the release party.

Jester King Figlet Debuts November 21st

Jester King Figlet, a collaboration with world famous Franklin Barbecue in Austin, Texas, debuts on November 21st, 2014.

The idea for this new offering started with an episode of “BBQ with Franklin” that focused on exploring the use of smoke in beer. Jester King took the idea a bit further by adding figs to the brew to impart the flavors of Franklin’s BBQ pits.

Texas figs were heat and cold smoked at Franklin Barbecue. Some were partially charred to impart a burnt flavor to the beer.

Jester King Figlet was brewed in July, 2014, then fermented for four months. Near the end of the stainless steel portion of fermentation, smoked figs were added to Figlet and allowed to re-ferment. As the sugars were broken down, the smoky aromas brought the finished flavor to a new level.

Figlet will available by the glass at the brewery, and in 750ml bottles.

Jester King Colour Five Releases on Halloween

Jester King Brewery (Austin, TX) will release Colour Five on Halloween. Colour Five is a blend of barrel aged sour beer with Texas blueberries.

The first attempt at this blueberry barrel aged sour beer failed in 2013. That batch was too vinegary (i.e. too much acetic acid.) The brewery decided to do something different for Colour Five.

This batch is 89% Das Uberkind, and 11% RU55. (The failed batch was all RU55 Sour Red.) The blueberries were frozen prior to refermentation to stave off acetobacter (makes acetic acid) and was allowed to ferment in stainless steel, where the brewery can push away oxygen (again, inhibiting acetobacter.) These steps (simplified for the story) helped Jester King bring Colour Five to fruition.

Jester King Colour Five will be available when the brewery opens at 4pm. By the glass, or 500ml bottles. ($16)
