Jester King Ambree Returns, Recipe Scaled Back

Jester King Ambree Farmhouse Amber Ale, Batch 3 is returning once again, a bit different from the original release.

Earlier batches of Jester King Ambree used as many as eight malts, and a special decoction mash (taking part of the wort out, boiling it in the kettle and adding it back to the mash). For Batch 3, the recipe has been simplified using three malts, then fermented with the brewery’s mixed culture of yeast and bacteria.

The alcohol by volume is lower to, down to 4.5% from the 7% range.

Our initial inspiration for Ambrée came from some of our favorite farmhouse ales from French Flanders, notably the beers brewed by Brasserie Thiriez in Esquelbecq, France. But for the third batch, we looked much closer to home for inspiration: Live Oak Brewing Company in Austin.

Jester King Ambree is available in 750 milliliter bottles the brewery’s tasting room, and though out Texas.

Jester King Vulgar Affection: Horehound & Lemon Beebalm

Jester King Vulgar Affection, a nearly one year old farmhouse ale, releases today.

Like all of the brewery’s offerings, Jester King Vulgar Affection has a unique story. The love of foraging local ingredients for their beer, and Fantome’s Pissenlit beer, brought this beer into focus.

In summer of 2014, Jester King took lemon beebalm wildflowers from a field nearby, and dried the leaves and flowers. In September, head brewer Garett Crowell dried fresh horehound and made tea using all the dried ingredients. That tea was added to the end of the boil.

Vulgar Affection spent six months fermenting in stainless steel tanks, and four months bottle conditioning (bottled in April, 2015).

Jester King Vulgar Affection will be available in the tap room August 7th, at 4 pm. $12 bottle, 3 bottle limit per day.

Jester King Foudreweizen, A Live Oak Collab [PICS]

Jester King Foudreweizen is the second collaboration Jester King has done with Live Oak Brewing Co. Both breweries are based in Austin, Texas.

To create Foudreweizen, Jester King transferred Live Oak Hefeweizen wort (boiled, but not yet fermented beer) from the brewery across town and brought it to Jester King to slowly ferment in their in house oak foudre. The yeast and bacteria in the oak walks of the foudre went to work.

After two months in the foudre, a tartness began to emerge as lactic acid producing bacteria began to convert organic compounds into organic acids. Finally, Foudreweizen continued to develop more funk and acidity as it matured in bottles, kegs, and casks during the two months prior to release.

Jester King Foudreweizen follows the first collaboration with Live Oak, Kollaborationsbier. For both releases, the breweries took wort and let a mix of wild yeast and bacteria decide what the beer becomes.

Brewed in January of 2015, Jester King Foudreweizen was bottled in March. Nearly 3,000 bottles will go on sale Friday, May 22nd, 2015.

Jester King Teams Up with Off Color Brewing

Jester King Radiolaria is a new collaboration with Chicago, Illinois based Off Color Brewing. The resulting beer, as the label states, is a “conflagration of wild yeasts.”

Jester King travelled to Chicago with a blend of Texas yeast and bacteria, and combined it with Off Color’s house microbes. The base beer is loosely based on Off Color’s Apex Predator, a farmhouse ale. The blend of both breweries funky mixed cultures give Jester King Radiolaria is unique flavor profile.

Jester King Off Color Radiolaria will be available in the Chicago area. Due to restrictive Texas laws, the beer will not be available in Texas.

Jester King Coquetier, A Sazerac Inspired Offering

Jester King Coquetier is a new barrel aged aged offering on sale at the brewery starting tomorrow.

The brandy barrel aged farmhouse ale is brewed with cubeb peppercorns, anise seed, lemon zest, and lemon juice. Jester King Coquetier grabs its inspiration from the traditional New Orleans cocktail, Sazerac.

Lemon zest recalls the cocktail’s traditional garnish, a thin sliver of lemon peel resting on the rim of the glass. The beer was aged in French brandy barrels, as the cocktail originally called for Cognac brandy.

Jester King Coquetier was brewed in April of 2014. The beer was first fermented in stainless steel using the the brewery’s unique blend of micro-organisms. After stainless, Coquetier was aged in 600 liter French brandy barrels for seven months before being refermented in bottles.

750ml Bottles of Jester King Coquetier will be available April 24th, at 4 pm.

Jester King Sin Frontera, with Trois Dames & Crooked Stave [PICS]

Jester King Sin Frontera is the latest release from the Austin, Texas brewery. The new offering is a collaboration between Brasserie Trois Dames in Sainte Croix, Switzerland, and Denver, Colorado’s Crooked Stave.

The concept behind Jester King Sin Frontera, is to brew three identical editions of the beer, and referment them in Spanish sherry barrels at three different locations on earth. The method would allow the beer to be shaped by the microorganisms unique to each location.

Jester King brewed their version in October of 2013 with Chad Yakobson of Crooked Stave and Raphael Mettler of Trois Dames. Sin Frontera was fermented in stainless steel for three months, then refermented in Spanish sherry barrels for 12 months, then refermented yet again in bottles for three month months.

Jester King Sin Frontera will launch on April 17th, at the brewery at 4 pm.

Jester King Equipoise is a low alcohol table beer, with subtle spice notes, brewed in September, 2014.

The thoughtfulness with which he creates layers of flavors has led to some of the most complex dishes we’ve ever tasted. Based on Chef Qui’s principles and philosophy, we similarly wanted to create a subtle, balanced beer that wouldn’t overwhelm the palate.

Jester King Equipoise will be available in 1.5 liter magnum bottles on April 3rd, 2015.
