Jester King Buford’s Roadside Wares, a new collab

Jester King Buford’s Roadside Wares, a new collaboration with Arizona Wilderness Brewing Co. debuts this month.

The creation of Jester King Buford’s Roadside Wares started back in January of 2015 when Jonathan Buford and Patrick Ware of Arizona Wilderness traveled to Jester King on a cold Texas day. In hand, the duo had Arizona pecans and Sonora white wheat. Jester King’s additions included Texas pecans and local white wheat.

The result is a new American wild ale inoculated with Jester King’s coolship’s mixed culture, aged in brandy barrels that once contained Jester King Repose.

Jester King Buford’s Roadside Wares was  “momentum batch” for the brewery – a batch of beer designed to wake up airborne yeast and bacteria in the air for more spontaneously fermented beers to come that season.

Available at Jester King starting March 18th, at 4 pm.

Jester King bottles 1st 100% spontaneous beer (PICS)

Jester King Brewery (Austin, Texas) bottled their first 100% spontaneously fermented beer this week. The unnamed beer should release in late 2016.

Back in 2013, the brewery used their coolship for the first time (a shallow tub where the wort cools). Jester King let it ferment using the native wild organisms in the Texas air.

That brings us back to this week. Nearly three years into the project, the brewery has finally blended and bottled their first spontaneous beer. Jester King estimates it will take anywhere from 6-9 months to re-ferment in the bottle prior to release.

The yet-to-be named beer now rests in 750 and 375 milliliter bottles, as well as kegs.

Jester King Cerveza de Tempranillo, Blend 2

Jester King Cerveza de Tempranillo Blend #2, goes on sale Saturday December 26th. The last time this beer was released was in February of 2014.

Jester King Cerveza de Tempranillo is a barrel-aged farmhouse ale, re-fermented with Texas-grown Tempranillo grapes. Blend #2 is slightly lower in alcohol by volume (7.2% vs. 9.4%), and was refermented in stainless steel, rather than oak like Blend #1.

 We’re happy about the fact that the grapes in blend 2 came from Texas, as opposed to California. Not that the California grapes aren’t good, but we prefer to embrace the characteristics we get from Texas microflora and soil, so as to make beer with a sense of place.

All in all, Jester King Cerveza de Tempranillo was fermented in both steel tanks and oak, racked to oak for maturation, refermented with grapes in steel, then bottle conditioned.  Total yield, 3,000, 500ml bottles.

Bruery Terreux Imperial Cabinet, brewed with Jester King

Bruery Terreux Imperial Cabinet has just debuted, a collaboration with Austin, Texas based Jester King Brewery.

Imperial Cabinet is a barrel-fermented farmhouse ale, inspired by the New Orleans Ramos Gin Fizz cocktail.

Since the cocktail uses gin, which has a strong botanical flavor, rosemary, lavender, juniper, and cubeb pepper were added to the boil along with dried orange blossoms. The beer’s tartness and acidity grew over the 10 months in barrels.

During the final weeks, orange peel, lemon zest, lime zest, and vanilla beans were added to the barrels.

Bruery Terreux Imperial Cabinet was fermented with a blend of both brewery’s mixed cultures used for wild fermentations.

Due to pathetic Texas laws, Bruery Terreux Imperial Cabinet will not be sold in Jester King’s home state. Bottles debuted in the Bruery tap room on October 30th.

Jester King Synthesis Analogous, Aged in Sherry Barrels

Jester King Synthesis Analogous, a new blend of farmhouse ales, releases Friday, September 18th.

The inspiration for Jester King Synthesis Analogous, comes from a few sources. Initially, how Belgian brewing legends Cantillon and Drie Fonteinen do second fermentations on some of their fruited beers. That process prompted Jester King to referment the raspberries from Atrial Rubicite to create La Vie en Rose.

Blackberries from Nocturne Chrysalis Blend #2 were refermented in a young farmhouse ale. That beer needed more time to mellow and smooth out, so it was in blended with La Vie en Rose (brewed with raspberries) and matured in Spanish sherry barrels.

We felt the nutty, caramel character from the sherry barrels would add a nice roundness to the blend over time. The ratio of the blend was 2:1 in favor of the beer refermented with blackberries from Nocturn Chrysalis. It matured in sherry barrels for over a year prior to packaging this July.

Jester King Synthesis Analogous will be available in the taproom on Friday September 18th, at 4 pm in 750 milliliter bottles.

Jester King Sherry Barrel Atrial Rubicite Arrives Sept 4th

Jester King Sherry Barrel Atrial Rubicite arrives in time for the Labor Day weekend.

As the name suggests, Jester King Sherry Barrel Rubicite is the raspberry laden American wild ale, aged for 15 months in Spanish sherry.

The base Rubicite was brewed in 2013, and matured in oak barrels for a year. In true Jester King fashion the beer was blending in Spring of 2014, then refermented with raspberries. From there, it was racked to the sherry barrels until July, 2015.

Jester King Sherry Barrel Atrial Rubicite was released Friday, September 4th in 330ml bottles at the brewery in Austin, Texas. it was sold out in a matter of hours.

Jester King Amicis Mortis, a Collab with Brasserie Dunham

Jester King Amicis Mortis, a collaboration with Brasserie Dunham in Dunham, Quebec releases this Friday.

This collaboration got started when the brewery first tasted Brasseries Dunham at the Shelton Brothers festival in Los Angeles. Jester King fell in love, and soon Dunham was brewing in Austin Texas.

Jester King Amicis Mortis is brewed with sweet potatoes, chili peppers, and coconut. The farmhouse ale was fermented in stainless steel using Jester King’s mix culture of locally harvested yeast and bacteria.

Jester King Amicis Mortis was packaged May 20th, 2015, in 750ml bottles. On sale when he brewery opens on Friday, August 21st. $12
