5 Rabbit Cerviceria in Chicago, Illinois has been open less than a year and is already making plans to build a brewery. The beers have been contract brewed at Argus Brewing. 5 Rabbit’s brews are Latin themed, using Latin ingredients like chiles, & dark chocolate.
The opening is tentatively schedule for August, 2012.
The brewery currently as 3 beers in their lineup –
5 Lizard: Latin-style Witbier brewed with spices and passion fruit.
5 Vulture: Oaxacan-Style Dark Ale brewed with piloncillo sugar and chile ancho.
5 Rabbit: All malt Golden Ale brewed with Saaz hops.
Their next beer will be called Vida y Muerte Ale, brewed in honor of Dia de Los Muertos. It’s an Oktoberfest brewed with dulce de leche and hoja santa spice. [ChicagoTribune]
