Atlanta! Meet , The Bruery. Launching today in Atlanta, The Bruery hails from Placentia, CA.

Founded out of the love of homebrewing, The Bruery basically started on a stove. Patrick Rue, his brother Chris and wife Rachel created an “amber” ale while Patrick was a first year law student. Over time the love of brewing couldn’t be held back any longer, and their life long goal was set.

The name “Bruery” is a meld of the word brewery with the family name “Rue.” All beers are unfiltered and unpasteurized. All carbonation is through bottle conditioning through secondary fermentation.

Sidebar – Primary fermentation is marked by the rapid release of carbon dioxide. Sugars are converted to alcohol and CO2. In secondary fermentation, yeast removes unwanted compounds like acetylaldehyde, diacetyl, and sulphur. (For those biology folks out there.) This is taking place in the bottle where it carbonates the beer. In some instances you will see the residual yeast sediment on the bottom of the bottle.

The Bruery seeks out unique ingredients in which to brew, creating new definitions of beer.

Now onto the beers. Hop City starting today is selling 3 beers from their lineup.

Saison Rue — 8.5% ABV, Belgian/French Farmhouse Ale. Malted Rye, spicy. Citrus hops, Wild Yeast. Brewed intermittently year round. Excellent fresh, and aged. $10.49
Orchard White — 5.7% ABV, Belgian Wit. Coriander, Citrus, Lavender. Rolled Oats. Fruit yeast strain. $7.49
Autumn Maple — 10%, ABV, Belgian Brown Ale. 17lbs yams per barrel. Spin off of Pumpkin style ales. Brewed with cinnamon, nutmeg, allspice, vanilla, molasses, & maple syrup. Fermented with Belgian yeast strain. $9.99
