Goose Island’s “Gillian” Set To Return

By all best estimates, 2010 was the last time the world saw Goose Island Gillian. This farmhouse ale is brewed with strawberries, white pepper, and honey, then aged in wine barrels. You might know Gillian by another name – Scully. Inspired by amuse bouche, and created to be a “harmonious blend of mouth amusement.” We’re told we should see this mouth pleaser in late 2013.

Belgian Style Farmhouse Ale with White Pepper, Strawberry, and Honey. Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast. One of our favorite brews of the past year with many levels of complexity and character.

Goose Island’s Sour Peach Saison Hits in October

Goose Island Halia

In May, we mentioned a draft only (at the time) newbie from Goose Island (Chicago) – Halia. The Belgian-style farmhouse ale will soon be offered in bottles .

Halia is brewed with peaches and aged in wine barrels with brettanomyces yeast, and it reported to have a nice sour note to compliment the fruit and wine notes. According to Goose Island this will be released in October.

Lost Abbey doing a saison? Shocking right? Sarcasm aside, the above is Saison Blanc, an homage to farmers. We are getting close to harvest season, a physically rough time for those who work the fields, making the grain in your brew. Brewed with golden raisins and white pepper.

Its honest brutal work out there in the fields. There’s no shade between you and the land needing to be farmed. Harvest time brings longer days spent toiling under the fiery sun as sweat and dust make mud cakes on your face. All day every day. It’s always the same. Been that way for years and it’s not changing anytime soon. Your family has been turning this soil since your daddy was knee high to the grasshoppers and your son will soon learn the importance of this earthen existence as well. Someday, he’ll pass your work ethic on to his son. And the pulse of this land will continue beating. Without families and farms there would be no crops. Without barley there would be no beer. Neither is a world we want to live in. So as you CAREFULLY pop this cork, please pause to reflect on those who reap what they sow enabling, us to have amazing bottles of beer at the end of each day.

Beer Street Journal Video: Brewing a Tomato Saison with Wild Heaven

Beer Street Journal joined Wild Heaven Craft Beers brewmaster Eric Johnson on a backyard brew day in rural Winterville, Georgia. This 50-gallon setup is the birthplace of Wild Heaven. This wasn’t any old pale ale brew day, we were on a special mission. Brew a special tomato-based beer for JCT Kitchen’s Attack of the Killer Tomatoes Festival.

Honestly, I can’t think of a single beer brewed with tomatoes. Neither could Eric, so when he went looking around brewers forums, not a lot of people thought it was a good idea. This is something you need to know about Eric Johnson. You can’t tell him no. For this first edition, the base beer is White Blackbird, an upcoming saison release by the brewery. Heirloom tomatoes were selected to add to the mash, then spiced with white peppercorns. For added depth, the saison was aged on cacao nibs and  Madeira oak.

If you are in Atlanta, you’ll get a shot at this brew this weekend.

Harpoon 100 Barrel #47: A Saison Blend

Session #47 in Harpoon’s 100 Barrel Series is in the works. The series allows a Harpoon brewer (or brewers) the chance to experiment and play. Saison Various is the as the name suggests, a little various. Three different saisons were blended together in a fun collaborative effort.

In the spirit of collaboration, Jamie stayed true to the farmhouse tradition of brewing without spices while Ryan balanced East Kent Golding hops with coriander and white peppercorn. Ethan’s American hops and a Trappist yeast strain complemented Rich’s citrusy hop profile, and the combined result is Saison Various: a refreshing blend of saisons, brewing sensibilities, and unique ingredients.

Summer Drinking: Heavy Seas Red Sky Returns

Heavy Seas Red Sky at NIght

Heavy Seas’s (Baltimore, MD) summer saison Red Sky at Night has returned, after being a bit hard to find for a while. The brewery has had some capacity issues thanks to some growing pains. Red Sky at Night uses Westmalle’s signature yeast, dating back to 1836. Throw in white wheat to soften the flavor and Belgian candi sugar, and you have a perfect hot weather drinker. Expect flavors of banana, clove, apricot, and allspice.
