Almanac Pumpkin Pie de Brettaville to join Farm to Barrel Series

Almanac Pumpkin Pie de Brettaville looks to join the brewery’s ongoing Farm to Barrel Series in the coming months.

The California based brewery already has a few different renditions of “Brettaville” in their lineup, including a Tangerine de Brettaville, and a Peach de Brettaville. Almanac Pumpkin Pie de Brettaville features roasted heirloom pumpkins and fall spices, aged in oak barrels.

We start by brewing a bright and aromatic farmhouse ale with a blend of twelve “brett” yeast strains. After a vigorous primary fermentation, the beer is racked into wine barrels to mature. In cask, the beer takes on the complex flavors of the oak, and the brettanomyces yeast creates an exotic melange of earthy funk and tropical fruit flavors.

Almanac Pumpkin Pie de Brettaville will be a 375 milliliter bottle offering.

Stone 6th Anniversary Porter joins Encore Series

Stone 6th Anniversary Porter has officially joined the brewery’s 20th Anniversary Encore Series.

Back in 2002, the Stone celebrated their 6th anniversary, not with an India pale ale, but with a porter. In this case, Stone Smoked Porter the brewery kicked up “three notches” with the addition of more hops and more malt. The beer was then aged on French and American oak. The result was a big, bold beer, that was rather scare at the time. In 2016, there will be a little more to go around.

There’s a point in even our brewing lives when we came to realize that no matter how much we wanted to, we couldn’t realistically add anymore hops to our recipe. While our hop threshold is greater than most, it happened on the onset of our 6th Anniversary. Up until then, all of our anniversary beers had been increasingly amped up versions of our 1st Anniversary IPA. Which all of you know as simply Stone IPA. Instead of completely abandoning our set-in-stone stance on making big bold beers, we continued with this theme of making Increasingly more intense versions of our existing line of beers. This time we turned our attention to Stone Smoked Porter -a beer we had in our lineup since our first year. When it came to modifying our recipe. we went against the “less is more” approach and cranked it up three notches. This entailed adding more malt and more hops and conditioning it on French and American oak to add notes of toffee, cherries, dried berries and vanilla. Such noble yet gutsy experimentation doesn’t go without some mishap and at one point this smoky dark·as·night wonder was shooting out of the fermenter like a fire hose because of an unsuccessful attempt to clear a valve jammed with oak chips. Luckily the beer’s fate didn’t entirely empty down the drain, because the Stone 6th Anniversary Porter proved to fans, with its distinctive smokiness and chocolaty, coffee·like complexity, that we can brew a remarkable amount more than just awesome IPAs.

Stone 6th Anniversary Porter is a 22 ounce bottle and draft offering. Recent releases in the Encore Series include 12th Anniversary Bitter Chocolate Oatmeal Stout, and Vertical Epic 08.08.08.

Wicked Weed Ferme de Grand-pere will soon expand the brewery’s line of foeder-aged beers… plus it shows off what they do best. Fruited wild and sour ales.

Wicked Weed Ferme de Grand-pere is rested in the brewery’s foeders in the brewery’s downtown Funkatorium. The Brettanomyces fermented American wild ale features locally grown marionberries.

The childhood farm of our brewers is the source of the love of all things cultivated from soil, sweat, and hard-earned know-how. Their grandfather was a purveyor of preserves and jams made from berries and fruits that he harvested with his own hands. From this early inspiration the seed of our craft took root and grew into a philosophy of creating beer with integrity berry to barrel to bottle. Firm de Grand-Pere is a foeder-aged, Brettanomyces farmhouse ale. This tart, deep amber ale was rested on over a pound per gallon of marionberries and bottle conditioned in our cellar to reflect and echo the rustic farm-style beers of old.

Wicked Weed Ferme de Grand-pere is a 500 milliliter bottle offering. The brewery has not yet announced this offering.

Hi-Wire Single Barrel Oak Fermented Tart Wild Ale

Hi-Wire Single Barrel Oak Fermented Tart Wild Ale is one of two beers debuting in the brewery’s new Single Barrel Series on April 1st.

The brewery’s South Slope location has become a wild and sour beer playground, now that the new production location is open just minutes away.

Hi-Wire Single Barrel Oak Fermented Tart Wild Ale is a wild ale brewed with cherries and raspberries, then aged in oak. The beer is a part of a dual bottle release, alongside Dark Saison.

Johnathan Parks, Head brewer of Hi-Wire’s specialty beer program, mentions that these initial releases will be different from what you’ll expect from the sour program in the future.

Hi-Wire Single Barrel Oak Fermented Tart Wild Ale is limited to 120, 750 mililiter bottles. Available solely at the South Slope tap room at 2pm on April 1st.

Hi-Wire Single Barrel Dark Saison kicks off new series

Hi-Wire Single Barrel Dark Saison will be one the brewery’s first entries into their Single Barrel Series on April 1st.

After the new production brewery (The Big Top) was completed last year, Hi-Wire announced that the original South Slope (downtown Asheville) location would become a sour/wild brewery. Early 2016 would reveal what is to come from the change.

Hi-Wire Single Barrel Dark Saison is brewed with dark malts, and aged in oak with Brettanomyces yeast.

“The main purpose of the new series is experimentation,” says Head Specialty Brewer, Johnathan Parks. “These beers are very different from what you are going to see from our larger upcoming wild and sour program.”

Hi-Wire Single Barrel Dark Saison is limited to 120, 750 mililiter bottles. Sold at the brewery’s South Slope tap room at 2pm on April 1st.
