How Omission Beers Become Gluten-Free (PR)

(Portland, OR) — Omission Beer, introduced by Craft Brew Alliance (CBA) in March, is sharing additional details about the brewing program that allows Omission Lager and Omission Pale Ale to be brewed using traditional ingredients, like malted barley, but without the gluten-levels associated with other malted barley-based beers. Every batch of gluten-free Omission beer, which is only available in Oregon, is brewed following the multi-stage program developed by the brewery, and every batch is tested by an independent lab to ensure that it contains gluten levels well below the international gluten-free standard of 20ppm or less. This standard is defined by the United Nations Food & Agricultural Organization and the World Health Organization.

Brewed by Widmer Brothers Brewing in Portland, Ore., Omission beers have turned heads in the craft beer industry, celiac community and beyond. Committed to educating consumers about the beers brewed under the Omission brand, CBA is offering greater insight into the proprietary brewing process behind the beers that everyone of legal drinking age can enjoy.

“We’ve had a great response to our new line of Omission beers and, naturally, a lot of questions about our approach,” said Terry Michaelson, CEO of CBA. “After a significant investment in research, testing and development over the past two years, we’ve established an entire brewing program focused on managing gluten in the brewing process from start to finish.”

The Omission brewing program includes additional steps and requires additional care, beyond standard brewing practices and protocols, to ensure that beer brewed with malted barley meets strict gluten standards set forth by the brewery:

— Ingredient and style selection: Omission beers are brewed with low-protein barley. Style choices are based, in part, on ability to reliably reduce gluten-levels to well below strict standards.

— Sanitization: All brewing equipment downstream from fermentation is freshly cleaned and sanitized for every batch of Omission beer. Unlike the process used in brewing other beers, where hot water rinse may be sufficient, equipment is cleaned and sanitized before Omission beers are brewed to avoid risk of cross contamination.

— Brewers Clarex(TM): Brewers Clarex(TM), an enzyme developed by DSM Food Specialties and traditionally used to prevent chill-haze in beers, is added during the brewing process. The enzyme, which has been used by craft brewers around the world as a clarifying agent since it was introduced more than five years ago, works to break down proteins, including gluten, in the beer.

— Testing: Every batch of Omission beer is tested for gluten by two independent labs using the R5 Competitive ELISA. Omission beer’s primary lab partner is Eurofins Scientific, the world leader in food and pharmaceutical products testing. Every batch of Omission beer is also tested by the Food Allergy Research and Resource Program (FARRP) at the University of Nebraska. Tests are also conducted internally by the brewery at various stages in the brewing and packaging processes; within a month, Omission beers will be tested internally at the brewery using the R5 Competitive ELISA as well. No bottles of Omission are released to consumers until all results are reviewed and verified to contain gluten levels well below the international gluten-free standard of 20ppm or less.

— Packaging: To further protect the integrity of the beers, Omission beers are only sold in bottles and never available on draught, where risk of cross contamination from tap lines or server error could threaten consumer safety.

— Consumer Education: CBA is committed to sharing information about the beers, brewing processes and testing so consumers can make a confident choice when purchasing and drinking Omission beer. Consumers are encouraged to visit www.OmissionTests.com , where they can enter the date code stamped on their bottle and view their beer’s R5 competitive ELISA test results.

Omission Beer Observes ‘Celiac Disease Awareness Month’ (PR)

PORTLAND, Ore., May 01, 2012 (BUSINESS WIRE) — May is widely recognized as National Celiac Disease Awareness Month and the brewers of gluten-free Omission Beer are celebrating by donating dollars to the cause. During the month of May, Omission will contribute a portion of the proceeds from all 6-pack and case sales purchased in the Widmer Brothers retail store and bottles purchased in the Gasthaus Pub, to support research efforts at Oregon Health & Science University (OHSU) in an effort to raise awareness and help find a cure. From May 1-31, Omission will offer two ways for craft beer-loving consumers to help this important work:

— Sales at the Widmer Brothers retail store. For the first time, Omission Beers will be available for purchase at the Widmer Brothers retail store. For every six-pack sold, Omission will contribute $1 to the cause.

— Bottle sales at the Gasthaus Pub. For every bottle of Omission Pale Ale and Omission Lager sold in the Gasthaus, $.50 will be donated. In addition, the Gasthaus will be featuring its new gluten-free menu all month.

Widmer Brothers has a new gluten free offeringsOmission Pale Ale & Omission Lager.  The gluten-free style of beer is growing with a greater awareness of those individuals with a gluten intolerance.  Gluten is found in barley, so brewing a beer without is a little complicated.  Each of Widmer’s Omission beers are lab tested for the presence of gluten.  Brewmaster Joe Casey explains the process.  Check out more gluten-free beers here.

The Alchemist Bottling Gluten Free Saison

The Alchemist (Waterbury, VT) will be bottling their gluten-free saison – Celia Saison. (Word play of celiac disease?)

…we are proud to announce that we are bottling our first batch of Celia Saison tomorrow at Mercury Brewing. Our award-winning gluten-free Belgian-style Saison was just begging to be produced, and we just don’t have the resources to do it justice. For now, we are brewing 70 barrels a month of this, and it will be available in Massachusetts and Vermont in the next few weeks. With time and increased production, it will spread throughout New England.

Collaboration!

…we have decided to brew a collaboration for the Vermont Brewers Festival in July. Initial conversations have some sort of ridiculously hoppy, devastatingly delicious stout of some sorts… Should be fun and delicious no matter what we decide upon.

Dogfish Head Tweason’ale, a gluten-free beer, has just shipped from the brewery.  Keeping with tradition, Sam Calagione does a “quick sips” tasting of the new beer.  Tweason is the first new 4 pack beer that they have released in over a half a decade.

Dogfish Tweason’ale, Namaste, Noble Rot, World Wide Ship This Month

Dogfish Head’s new gluten-free offering will start shipping next week, with Namaste, & Noble Rot shortly after…

Tweason’ale – will begin shipping to wholesalers the week of 1/16 and should be hitting retail between 1/23 and into early Feb (depending on when your local wholesaler takes delivery).
Namaste – will begin shipping to wholesalers the week of 1/30 and should be hitting retail between in early Feb.
Noble Rot – will begin shipping to wholesalers the week of 1/23 and should begin hitting retail the week of 1/30.
2011 World Wide Stout – will begin shipping to wholesale the week of 1/23 and will begin hitting retail the week of 1/30.  It will not be brewed in 2012.

As these beers hit retail, they will begin appearing on the Fish Finder at our website.

Goose Island Gluten Free

“Queen-oa is a gluten-free offering from Goose Island Clybourn that was just introduced this week. Street brewpub this week.

While not officially certified gluten-free, the 6.1% beer was brewed with red and white varieties of the gluten-free grain quinoa, and as well as cranberries, orange peel and ruby red grapefruit. The brewery describes it as “bursting with ruby red grapefruit aroma and effervescent citrus flavors.” It’s on tap now at the Goose Island Clybourn, 1800 N. Clybourn Ave., and available to take home in growlers. It should be available at the Wrigleyville location soon
