The method:
We boiled the wort for the standard 75 minutes, and then transferred the wort back into our lauter tun, adding half the wet fresh hops in the lauter tun. We let the wort steep with the wet hops for 30 minutes, then chilled the wort down on the way to the fermenter. We then transferred another mash into the lauter tun, which still held the wet hops from the previous batch ( a kind of mash-hopping of the second batch). We then boiled the second batch, and used the other half of the wet hops again in the lauter tun with the second batch.
Sounded good on paper, but the wet hops made the second batch a sticky mess. Thank you to Quinn, our head brewer, for sticking it out over a 12 hour day to make sure we finished the brew. [YazooBrewing]

Gerst 6 packs– A beer brewed in Nashville by William Gerst Brewing Company is being revived by Yazoo. Gerst closed it’s doors in 1954, but the beer was revived in the ’90s by Evansville Brewing. Due out early 2012.

About Hop Project:
This brew is an India Pale Ale by style, but that is where the similarity to most IPAs ends. Each consecutive batch of Hop Project is brewed with a different blend of spicy, aromatic hops, never using the same blend twice. It’s a Hophead’s dream come true! Check the bottled on date and our blog to decode what specific hop varieties we used in that batch.

Yazoo Brewing (Nashville, TN) is potentially expanding. The current 10 man brewing operation has seen 50% growth in the past year. Riding high on this growth, is expansion possible? Linus Hall says maybe. Apparently the brewery had to slow distribution expansion in Mississipi (an unfortunately dry desert for good beer already) to keep up with demand in the southeast.
Yazoo brewmaster Linus Hall said on Nashville Public Radio:
“We want to see if this growth is sustainable. We’re contemplating putting a lot of money into expansion and more capacity and if all the sudden the market falls off our cools off, we’ll be stuck with a lot of equipment we can’t use.”
Atlanta is a big and expanding beer market. It’s save to say that a brewery expansion would be needed to not only keep up with demand, but reach new markets. Stay postive. <NashvillePublicRadio>
