The infamous other side to beer.  A cold fermented yeast.  Pale lager is the most widely consumed style on the planet. Unlike ale yeasts, lager yeasts ferment on the bottom.

About Brettanomyces Lambicus:

The yeast strain is pungent and strong. Known to give the beer “horse blanket” flavors, spice, and some smokey flavor.  Used in lambic style beers.

Mikkeller Invasion IPA Bottled at Anchorage [Video]

A quick look inside the inner workings of a brewery.  Mikkeller, a Danish gypsy brewer, just bottled Invasion IPA at Anchorage Brewing.  So named, because it’s the first time Mikkeller has bottled their own creations (not collaborations with other U.S. brewers) on American soil.

Mikkeller Ages Funky E Star In Expensive Wine

Mikkeller is diversifying the Funky E Star lineup.  The Belgian strong pale looks to return as a wild ale (over the standard pale ale)  this time around, aged in Chardonnay.  Depicted above is the second in the series of new Funky Es, aged in Sauternes wine barrels.  Sauternes is a French sweet wine from the Satuernais region, near Bordeaux.  Sauternes wines are a blend of three grapes (Sauvignon Blanc, Semillon, & Muscadelle) infected with noble rot.  (Remember the recent Dogfish Head beer?)

Yet another expensive ingredient going into a Mikkeller beer, as Sauternes wines are pretty pricey due to the high cost of production.  Other high price ingredients include black truffles, and Kopi Luwak coffee.

Mikkeller Uses Black Truffles in The Forager

Mikkeller’s newest brewing ingredient?  Black Truffles.  The forthcoming stout The Forager uses the delicacy.  The truffle is actually the fruiting part of an underground mushroom (the apple/orange/berry “edible” part).  Black truffles aka “Perigord” Truffle is so named for the region of France where it is found.  Hogs are typically used to sniff out the underground delicacy.  The flavor is earthy, slightly pungent, and very unique.  One pound of black truffle retails for around $800 dollars.

Black Truffles aren’t the only rare ingredient Mikkeller has brewed with.  Their Beer Geek Brunch series of beers uses some of the most rare coffee in the world – Kopi Luwak. AKA weasel poop coffee.
