Pours cloudy straw in color with moderate notes of orange peel, coriander and hints of vanilla. Flavor has upfront citrus with coriander notes that lead into lemon/lime like notes and finishes with citrus and flowers. Incredibly refreshing and drinkable.

Highland Brewing officially announced last week that they would be releasing a new summer seasonal in place of Cat tail Wheat – Razor Wit.
This Belgian-style Wit, or “white” ale, is an unfiltered wheat beer brewed with traditional ingredients and a Highland twist. Wits are conventionally brewed with noble hops, pale malt, unmalted wheat, orange peel, and coriander. We have made this beer our own by adding other unique spices to create complex aromatics, a refreshing taste, and a crisp finish. Light in color with a smooth body, Razor Wit is perfect for hot summer days and sultry summer nights. Just a wee bit different. -Look for our other unique brews available in retail stores and restaurants.
“I love the ginger,” said head brewer Joey Justice. “Ginger can dry the beer out, and grains of paradise are sort of hot, so we started with a slightly sweeter base and more body to compensate for the spices.”
There’s a lot of flavor in this summer beer. When you’re brewing with spices, it’s tricky. Boil the spices, you could get off flavors. Heating/warming gently is the way to go.
“We ground the spices, heated them in water to simulate what would happen in the boiling process, and dosed each one in a neutral beer,” said Justice. “We identified the flavors we got from each spice… and talked about how they would work together.”
Balance of flavors is key here. Nothing extreme. Just flavorful and complex. Razor Wit, like Little Hump, and Cold Mountain is named after a North Carolina mountain.

They work to protect the NC and TN Appalachians — the world’s oldest mountains — including their unique plant and animal habitat, water, farmland and scenic beauty that is vital to Highland and the Asheville area.
Blue Moon is hosting a series of tasting events around the United States for consumers to taste and choose for themselves. More about the three choices:
Caramel Apple Spice: A blend of cinnamon and nutmeg combine with roasted caramel malts and fresh apple juice for a warming, spiced taste.
Blackberry Tart Ale: The aroma of rich blackberries sets up the slightly sweet yet tart taste that’s balanced be the subtle malt character.
Dark Chocolate Bacon Porter: The deep-mahogany colored ale is brewed with hickory-smoked bacon and dark chocolate for a slight sweet yet savory taste.
