Jester King Debuts “El Cedro”

On December 20th Jester King will debut its latest creation, El Cedro, at during the Austin Beer Guide Winter Release party. At 8.0% ABV this farmhouse ale is dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast.

“It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.”

Following the release party, a small number of kegs will be released to the Texas area followed by bottles in 2013.

Backlash Ships Second Apocalypse Beer “War”

Backlash Beer Company has shipped the second installment in their Apocalypse Beer SeriesWar. War is the second horseman of the Apocalypse, and the follow up to Conquest.

In the spirit of the horseman, I wanted to infuse this beer with an element of conflict.  To get there, I pitted 3 yeast strains against one another in primary fermentation, 2 Belgian ale strains and a farmhouse strain.  The result?  It’s pretty safe to say that the farmhouse strain dominates the flavor profile.

Jester King Funk Metal Bottles Ready To Go

Jester King is ready to release Funk Metal Sour Barrel-Aged Stout. For this funky release, the brewery took an imperial stout and fermented it with a farmhouse yeast and aged it in oak barrels. The barrels are full of wild yeast and funky souring bacteria that make this beer a must have.

Down below heavy clouds, swollen and green with electric rain, the two-grinned snake waves at us in the arrythmic symphony. We dance up the leg of a star dusted mountain; from its summit our souls are projected into the darkness of the universe as scattered laser light beams. We seek the taste of eternity.  You dig? 

Style: Imperial Stout (Barrel Aged, Sour)
Hops: Millenium, East Kent Goldings
Malts: Pale malt, Black, Carafa, Dark Crystal

Flavor? Per JK: The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

A new seasonal on the horizon for 21st Amendment Brewery (San Francisco, CA) – Sneak Attack Saison. Note the drunk Washington crossing the Delaware references in the label. The first thing that strikes me about Sneak Attack is how few saison/farmhouse ales there are on the American beer market in cans.  Brewery Vivant, Surly Brewing, and Hillard’s (Seattle, WA) immediately come to mind.

A Shiner Farmhouse Ale Coming This Spring?

Shiner FM 966 Farmhouse Ale

Is Spoetzel Brewery (Shiner, TX) adding a farmhouse ale to the Shiner lineup?   Looks that way this spring. Shiner FM 966 Farmhouse Ale echoes a style brewed for centuries. Quite interesting from a brewery that has been predominantly producing lagers for quite some time.

A few centuries ago, during the cold winter months, farmhands in Europe brewed a ‘seasonal provision’ Farmhouse Ale to be enjoyed once spring rolled around. In the farmlands of Shiner, TX that tradition lives on which is why our tribute to this style uses Golding, Sterling and Meridian hops for a sweet yet lightly spiced flavor. Our incredibly refreshing farmhouse ale bears the name of the farm to market road just to the south of where our brewery has proudly stood for over 100 years.
