Birds Fly South False Face, a sour stout

Birds Fly South False Face, a sour stout, is the next release by the Greenville, South Carolina brewery.

The base beer is a sweet stout that has been fermented in open wine vats with a mix of lactobacillus souring bacteria, house yeast, and Brettanomyces. Birds Fly South False Face was then aged in Four Roses Bourbon barrels with more wild and sour cultures.

This stunner of a stout was barely aged in bourbon barrels for a good long while after our house lactobacillus and yeast had a chance to play, then bottled conditioned for one month.

False Face is named for a ceremonial mask worn by some Native American tribes to cure the sick.

Kegs of Birds Fly South False Face will be available the week of March 21st  at Appalachian Ale House in Pickens, South Carolina. Bottles will be distributed in April, 2016.

Style: American Wild/Sour Ale (Wine AgedBarrel Aged. Bourbon.)
Availability: 750ml Bottles, Draft. Limited Release.
Debut: Late March, 2016

Jester King Buford’s Roadside Wares, a new collab

Jester King Buford’s Roadside Wares, a new collaboration with Arizona Wilderness Brewing Co. debuts this month.

The creation of Jester King Buford’s Roadside Wares started back in January of 2015 when Jonathan Buford and Patrick Ware of Arizona Wilderness traveled to Jester King on a cold Texas day. In hand, the duo had Arizona pecans and Sonora white wheat. Jester King’s additions included Texas pecans and local white wheat.

The result is a new American wild ale inoculated with Jester King’s coolship’s mixed culture, aged in brandy barrels that once contained Jester King Repose.

Jester King Buford’s Roadside Wares was  “momentum batch” for the brewery – a batch of beer designed to wake up airborne yeast and bacteria in the air for more spontaneously fermented beers to come that season.

Available at Jester King starting March 18th, at 4 pm.

Style: American Wild/Sour Ale (w/ Pecans. Barrel Aged. Brandy.)
Hops: Fuggle

Availability: 750ml Bottles, Draft
Debut: 3/18/16

Wicked Weed Ferme de Grand-pere

Wicked Weed Ferme de Grand-pere will soon expand the brewery’s line of foeder-aged beers… plus it shows off what they do best. Fruited wild and sour ales.

Wicked Weed Ferme de Grand-pere is rested in the brewery’s foeders in the brewery’s downtown Funkatorium. The Brettanomyces fermented American wild ale features locally grown marionberries.

The childhood farm of our brewers is the source of the love of all things cultivated from soil, sweat, and hard-earned know-how. Their grandfather was a purveyor of preserves and jams made from berries and fruits that he harvested with his own hands. From this early inspiration the seed of our craft took root and grew into a philosophy of creating beer with integrity berry to barrel to bottle. Firm de Grand-Pere is a foeder-aged, Brettanomyces farmhouse ale. This tart, deep amber ale was rested on over a pound per gallon of marionberries and bottle conditioned in our cellar to reflect and echo the rustic farm-style beers of old.

Wicked Weed Ferme de Grand-pere is a 500 milliliter bottle offering. The brewery has not yet announced this offering.

Style: American Wild Ale (w/ Marionberries. Oak Aged.)
Availability: 500ml Bottles
Release: TBA

Ferme de Grand-pere translates from French to “Grandfather’s Farm.” (Our French is rusty.)
