Southern Tier Cherry Gose is one of the latest releases from the Lakewood, New York based brewery.
The gose style hails from Germany. At least 50% of the base beer is brewed with wheat, plus adjuncts like salt and coriander. Most goes-style beers are around 4 to 5.5% alcohol by volume.
Southern Tier Cherry Gose incorporates tart cherry juice in an imperial edition of the style. The brewery’s home state of New York ranks 4th in the United States in tart cherry production. A unnamed grower near the brewery provided the cherry puree.
Cherry Gose is soured over the course of three days using Lactobacillus buchneri, a strain of souring bacteria.
Quantitatively, this beer is quite sweet, but we find that this level of residual sweetness is just enough to balance the acidity and that the overall perception of the beer is actually quite dry.
The beer will be available in 12 ounce bottles and draft as a limited release.
