Wicked Weed adding a second sour facility

Asheville, North Carolina’s Wicked Weed Brewing is adding a fourth facility in Summer, 2016.

The brewery is now in their forth year of brewing. It all started with a brewpub located downtown. In 2014, Wicked Weed announced the addition of the Funkatorium, also located downtown, dedicated to wild and sour beer production.

This summer, the new facility has the capability to double the wild and sour beer output. A temperature controlled, 57,000 square foot facility is being constructed on 17 acres, near the Asheville Airport and Sierra Nevada.

“The goal of this expansion is not just to increase our production of these beers. Having more space to focus on process and room to move will help us continue to refine our craft and evolve as a brewery – Walt Dickinson, Owner and Head Blender.”

The brewery hints at the addition of spontaneous styles of beer (lambics) and perhaps even a coolship to support that process.

The new sour facility will be dedicated to training end education of the staff, sales team and retailers. There are no plans to open to the public.

Wicked Weed Red Angel returns March 26th

Wicked Weed Red Angel returns once again on March 26, 2016. The sour and wild “Angel” series has been a very successful one for the Asheville, North Carolina based brewery.

Based on fan’s love of the brewery’s second-ever bottle release, Black Angel, and the extra barrel aging space in the Funkatorium, a full-on Angel series was born. The Angel lineup starts with Red Angel, and includes White Angel, Golden Angel, and Angel of Darkness.

Wicked Weed Red Angel is a red sour ale, aged in white wine barrels with raspberries. The brewery used around 1.5 pounds of raspberries per gallon in the brewing process.

Wicked Weed Red Angel pre-sale tickets have sold out once again in 2016. There will be limited day-of bottles available at the brewery’s Funkatorium on March 26th, 2016. $20/bottle.

Wicked Weed Ferme de Grand-pere

Wicked Weed Ferme de Grand-pere will soon expand the brewery’s line of foeder-aged beers… plus it shows off what they do best. Fruited wild and sour ales.

Wicked Weed Ferme de Grand-pere is rested in the brewery’s foeders in the brewery’s downtown Funkatorium. The Brettanomyces fermented American wild ale features locally grown marionberries.

The childhood farm of our brewers is the source of the love of all things cultivated from soil, sweat, and hard-earned know-how. Their grandfather was a purveyor of preserves and jams made from berries and fruits that he harvested with his own hands. From this early inspiration the seed of our craft took root and grew into a philosophy of creating beer with integrity berry to barrel to bottle. Firm de Grand-Pere is a foeder-aged, Brettanomyces farmhouse ale. This tart, deep amber ale was rested on over a pound per gallon of marionberries and bottle conditioned in our cellar to reflect and echo the rustic farm-style beers of old.

Wicked Weed Ferme de Grand-pere is a 500 milliliter bottle offering. The brewery has not yet announced this offering.

Wicked Weed Myrtille coming to Canvas Series

Wicked Weed Myrtille is coming soon the brewery’s Canvas Series in the near future.

The base golden sour was was aged in neutral wine barrels, locally grown North Carolina blueberries. (Neutral wine barrels are typically older barrels that impart very little if any oak barrel flavor to the liquid inside.)

Wicked Weed Myrtle is a golden sour ale aged in neutral wine barrels. Two pounds per gallon of fresh, whole North Carolina grown blueberries contribute an earthy and tannic backbone to this uniquely southern sour. When the time is right, the barrels are blended to achieve the perfect balance of berry and house Brett culture.

Wicked Weed Myrtille will be a 500 milliliter bottle offering, The brewery has not yet announced this beer.

Wicked Weed Garcon de Ferme, a foeder beer with peaches

Wicked Weed Garcon de Ferme, a new foudre aged beer on the horizon from the Asheville, North Carolina based brewery.

Peaches highlight Garcon, an foeder aged American wild ale. The base farmhouse ale was fermented with house Brettanomyces, then blended with a golden sour ale.

Our craft honors our childhood lessons. We were lucky to learn ours the hard way: “stick with it,” “wipe your tears,” “Earn your calluses,” and “try to keep up with our ol’ man.” These are the lessons that stay, working their way into our weather flash and aching bones until they are as much a part of us as our own names.

Garson de Ferme is a foeder-rested, Brettanomcyes farmhouse ale.  After fermentation,this pleasantly tart ale is blended back onto over a pound and half per gallon of fresh, whole peaches to reflect and echo that the craft of the old has not been wasted on the young.

Wicked Weed Bramble Barrel joins Canvas Series

Wicked Weed Bramble Barrel has joined the Asheville, North Carolina brewery’s Canvas Series. Inspired by the the Gin Bramble cocktail.

The base beer for Wicked Weed Bramble Barrel is an American sour ale, brewed with local blackberries, and aged in Cardinal gin barrels. Those barrels give the beer a touch of spearmint. The finishing touch is lemon zest, to properly mimic the cocktail.

The bramble cocktail hails from 1880’s London, England. Dry gin and lemon juice are the stars of the cocktail, along with red fruits like blackberries and cranberries. (No cranberries in this beer.)

Wicked Weed Bramble Barrel is available in the usual 500 milliliter bottles. Distribution started this week.

Wicked Weed Oaxacan released

Wicked Weed Oaxacan, an amber sour ale, has been released. The beer joins the brewery’s ongoing Canvas Series.

The creation of Wicked Weed Oaxacan starts as lighter bodied amber, soured using the brewery’s house mixed culture, then aged in organic Blue Agave Tequila barrels with grapefruit and lime zest.

Once the beer was ready, it was blended again with additional grapefruit.

Distribution of Wicked Weed Oaxacan started this week across the brewery’s territory. Available in 500 milliliter bottles.
