Newly Found Yeast Gene Could Make Beer Head Better

Saccharomyces pastorianus, a popular beer yeast, has yielded the first gene for beer foam.  Recently published in the Journal of Agricultural and Food Chemistrythe gene could potentially improve the stabilization of the foam.

The Breakdown

The head of your beer consists of bubbles full of CO2. Carbon dioxide is the gas created as yeast turns sugar into alcohol. (The fun stuff.) These bubbles are formed by proteins from the grain and yeast. These proteins stabilize the bubbles, preventing the head on your beer from dissipating too quickly. The mystery was which yeast gene was responsible for making the protein that stabilizes the head on the beer.

That gene is CFG1. It’s identification could lead to improvements to foam character in your favorite beer.

Tweet From Beer Advocate Founder Gets Bad Feedback

Todd Alstrom, one of the founders of BeerAdvocate.com, tweeted his joy at seeing a family’s car towed from their parking lot right before Hurricane Sandy hit. I’m not sure he expected the response from his followers he got. As you can see below, it wasn’t very positive.

 

The Reddit thread has 300+ responses now. When you type his name into Google, douchebag is part of the suggested search. Isn’t technology great?

Worlds Strongest Beer Is Now 65% ABV

The race to the strongest beer in the world is a bit like the race to the moon. Scottish brewery Brewdog has held the title previously – with Tactical Nuclear Penguin (32%)  and Sink The Bismarck! (41%).  Brewdog even outdid the 41% entry with The End Of History, a 55% blonde ale shoved into a dead, stuffed squirrel.

It wasn’t long before they were then overtaken by Schorschbräu Schorschbock (57% ABV). The newest to the top? Brewmeister Armageddon, a Scottish brewery that clocks in at 65% AB.  Modeled after the eisbock style. Eisbock (ice bock) is a German style created by flash

freezing the beer. The first to freeze is removed leaving the liquid more potent. In this instance, the process is repeated until the desired ABV is reached.

The world’s strongest beer at 65%. Ingredients include crystal malt, wheat, flaked oats and of course 100% Scottish spring water. We then freeze ferment the beer to bring up the ABV. Consume this like a fine whisky. Despite being 65%, the beer has a lot of flavour – malty, hoppy, slightly sweet and lots of yeast still in the beer. Be careful though, smelling it is probably enough to put you over the limit!

Samuel Adams Tweaks Latitude 48 Recipe

Samuel Adams Latitude 48 IPA

A few changes are in store for Samuel Adams Latitude 48 IPA.  Starting in February 2013, it will be available in 12 packs for the first time. ERP $13.99.  Also, the recipe will be tweaked a bit in the coming year, with the addition of Mosaic hops.

Latitude 48 will be available in 12 oz 6 packs, 12 packs, and Draft.
