Fullsteam Brewery (Durham, NC) brewed a special beer in December for the sold out Raleigh Rare Beer Tasting and 2013 Brewvival in Charleston, South Carolina. The beer? A “Kentucky Common” brewed with all local grain, including rye and corn. A sour mash was used to brew the common, meaning they soaked the fermentables out of the grain and allowed in to sit for a couple of days to sour. Mimicked (loosely) the same way one would make sour mash whiskey. If you attend either festival, don’t miss this brew.
