3 Sheeps to release 3% “Two Tree” in November

In Wisconsin, “two or three” has a way of turning into “a couple two t’ree.” That bit of Midwest dialect gave 3 Sheeps Brewing the name for its newest core beer, Two Tree, a 3% ABV hazy IPA.
Beer Street Journal joined founder and brewmaster Grant Pauly at the 3 Sheeps taproom in Sheboygan for a first taste ahead of the launch. Two Tree is aimed at drinkers who want the hop flavor and haze of a hazy IPA with a lot less alcohol. Getting there took more than scaling back an existing recipe. Alcohol shapes a beer’s body and flavor, so simply cutting it back changes how the finished beer tastes. The brewing team spent months on test batches to get this session IPA right.
3 Sheeps runs a successful barrel-aging program, and in the two-plus years we’ve been visiting the taproom, there have always been three or four barrel-aged beers on tap. Those beers come with a pretty high ABV price tag. A 3% IPA to follow them up opens a whole new world of drinking opportunity.
Barrel-aged beers aside, Two Tree arrives at a time when folks are drinking less or looking for lower-ABV options. Earlier this year we wrote about “zebra striping” [link TK], where bargoers alternate alcoholic drinks with non-alcoholic ones to stretch a night out or skip the consequences the next morning. A 3% IPA fits that trend perfectly.
Two Tree is hopped with Cascade, Ekuanot and Trident. In all honesty, if no one had told us it was a 3% IPA, we wouldn’t have known. The lower alcohol doesn’t sacrifice flavor in the slightest.
Two Tree releases November 7 in 12-ounce cans and on draft. It will be poured at the 3 Sheeps Taproom, 1837 North Avenue in Sheboygan, and sold in bars, restaurants, grocery and liquor stores throughout Wisconsin, northern Illinois and the Chicago area.
Founded in 2012, 3 Sheeps is Wisconsin’s third-largest craft brewery. Earlier this year, Beer Street Journal was on hand for the brewery’s 14th anniversary party.
