New Holland’s Incorrigible Coming to Cellar Series

The New Holland Cellar Series is a dream come true for folks looking for a wild, and funky experience. Blue Sunday, the brewery’s sour, releases every January.

A new entry is coming soon to the Cellar Series – Incorrigible. The house of New Holland funk has allowed wild yeasts and bacteria run free in a wheat beer. While the final abv hasn’t been revealed, expect it to be closer to a sessionable offering. (Lower abv.)

Lambic, The Rundown. 

A lambic is a spontaneously fermented beer. What’s that? The beer is exposed to wild yeasts and bacteria. In this case (most likely) these wild yeasts live in the oak of the barrels they are aged in. The result is a tart/sour tasting beer.
