Mikkeller Uses Black Truffles in The Forager
Mikkeller’s newest brewing ingredient? Black Truffles. The forthcoming stout The Forager uses the delicacy. The truffle is actually the fruiting part of an underground mushroom (the apple/orange/berry “edible” part). Black truffles aka “Perigord” Truffle is so named for the region of France where it is found. Hogs are typically used to sniff out the underground delicacy. The flavor is earthy, slightly pungent, and very unique. One pound of black truffle retails for around $800 dollars.
Black Truffles aren’t the only rare ingredient Mikkeller has brewed with. Their Beer Geek Brunch series of beers uses some of the most rare coffee in the world – Kopi Luwak. AKA weasel poop coffee.
