Coming Soon – Dogfish Head – Sah’tea

One thing I can always expect from Dogfish Head Ales, its inimitable beer creations. A new Dogfish beer is on its way to Atlanta — Dogfish Sah’tea.

Sah’tea is actually known as Sahti hailing from Finland. Sahti while a beer is a little different from general notion the term conjures up. Sahti uses a variety of common beer grains ( rye, oat, barley — malted and unmalted, and wheat.) In traditional brewings, Sahti is flavored with juniper berries. Unlike many American ales, Sahti has fewer hops, in some instances none — focusing on the berry flavor.

Back to Dogfish Sah’tea. Dogfish of course had to add unique personal touch, by caramelizing the wort with hot river rocks. (Wort is a part of the beer brewing process that has the sugars that will be fermented by yeast to make alcohol.) In this case, the yeast is German Weizen yeast. Juniper berries straight from Finland also made their way into this brew. Dogfish finishes this creation with a form of black tea made from cardamom, cinnamon, ginger, cloves and black pepper. It adds a spicy tone to the beer that is subtle, but tasty.

UPDATE! – I have tasted this new creation, and first and foremost – it is very floral. Definite notes of Chai Tea, honey and a little malty. Finishes sweet. Want to throw your taste buds for a loop- give Sah’tea a taste.

Dogfish posted some youtube videos on the process. If you want to see this actual process — take a look here http://www.dogfish.com/brews-spirits/the-brews/occassional-rarities/sahtea-0.htm

Dogfish Head Releases 75 minute IPA

Dogfish Head 75 Minute IPA

Dogfish Head 75 Minute IPA

YES! A new Dogfish Ale. As a big fan of the entire IPA series from Dogfish Head, a new IPA joins the lineup – 75 Minute IPA.
This creation comes from mixing 60 Minute & 90 minute, with a cascade dry hop session. To make this IPA even more unique – when the hopping is complete, it is then transferred into firkins (fancy word for wooden barrel) where yeast and maple syrup is added. The firkin is sealed shut, and re-fermented. This makes for an IPA that finishes differently than the 60/90/120 Minute IPAs. The initial taste is hoppy and bitter as expected. However, the maple syrup gives it s sweeter finish.
Now, as great as this sounds (and tastes), the bigger question is will this ale come to Atlanta any time soon? Regrettably, probably not in 2009. 75 Minute was launched in a “Simul- Cask” event in Philly, NYC, Baltimore and of course Delaware. It has been successful since its launch a few weeks ago, and word from DFH is that 75 Minute will be continue to be produced in the launch states. There is a chance it will be produced on a larger scale for sale in the southeast in 2010. (Ah well. )

Quick overview of Dogfish’s IPAs.
60 Minute IPA — 6% ABV (Hoppy)
90 Minute IPA — 9% ABV (Hoppier)
120 Minute IPA — 21% ABV (Hoppiest! — and Liquid gold. Also, no allowed to be sold in GA.)
75 Minute IPA — 7.5% ABV
