Bruery Terreux Imperial Cabinet

Bruery Terreux Imperial Cabinet has just debuted, a collaboration with Austin, Texas based Jester King Brewery.

Imperial Cabinet is a barrel-fermented farmhouse ale, inspired by the New Orleans Ramos Gin Fizz cocktail.

Since the cocktail uses gin, which has a strong botanical flavor, rosemary, lavender, juniper, and cubeb pepper were added to the boil along with dried orange blossoms. The beer’s tartness and acidity grew over the 10 months in barrels.

During the final weeks, orange peel, lemon zest, lime zest, and vanilla beans were added to the barrels.

Bruery Terreux Imperial Cabinet was fermented with a blend of¬†both brewery’s mixed cultures used for wild fermentations.

Due to pathetic Texas laws, Bruery Terreux Imperial Cabinet will not be sold in Jester King’s home state.¬†Bottles debuted in the Bruery tap room on October 30th.
