Wine & Cheese Celebrates 30 With Bad A$$ Barrel Aged Collabs

The Wine and Cheese Place a beer mainstay in the Saint Louis is celebrating 30 years in true beer lover style.  They will be collaborating with local Missouri breweries to create 4 unique, barrel aged beer for sale at their store.

The Collaboration Series started with our decision to start choosing and purchasing our own barrels of Bourbon for our store. The first bourbon we chose was our own Single Barrel of Buffalo Trace Bourbon. Buffalo Trace bottled our bourbon for us and allowed us to keep the empty barrel that it aged in for years. Instead of cleaning and finishing the barrel for display as they usually do for retailers that buy a full barrel Buffalo Trace agreed not to wash or rinse the barrel — they just sealed it up and shipped it to us. Why? We had a great idea to take the barrel and give it to our friends at Schlafly to make a wood-aged beer using our bourbon barrel!! As a result, we have a whole barrel of Bourbon and soon a whole barrel of beer aged in the same cask!

Currently, they have 4 breweries lined up for The Wine and Cheese Place Collaboration Series.

Collaboration 1: Buffalo Trace. Schlafly Brewing’s Quad. In barrels since 8/5/11

Collaboration 2: 9 Year Old Knob Creek Barrel, sent to Perennial Artisanal Ales. Filled with Heart Of Gold Wheatwine. In barrel since 10/6/11

Collaboration 3:  Elijah Craig 12 Year Bourbon Barrel.  Four Hands Brewing Company. Filled with Espresso Vanilla Stout. To be barreled Nov, 2011.

Collaboration 4:  Buffalo Trace Barrel. 2nd Shift Brewing. The brewery wants you to vote on the beer (click here to vote).  Barreled ASAP.

Availability:  18-22 cases of 750-ml bottles. All locations.

Arrival: TBA

Congrats Wine & Cheese on 30 years!

Schlafly Bavarian-Style Weissbier

Schlafly Bavarian Style Weissbier.  Part of the brewery’s Brewer’s Choice Series.

Our Bavarian-style Weissbier is an authentic German-style unfiltered wheat beer, full of clove and banana characters. The unfiltered beer results in haziness, leaving the yeast and grain protein to provide extra mouth feel. While not a hoppy beer, the German Tettnang and Hallertau Tradition hops provide a minimum level of bitterness. The unique Bavarian ale yeast strain gives clove and banana flavors in the final beer.

Weissbier means “white beer” in German. Before the development of lighter colored malts, Germans produced beers from wheat, darker in color and not categorized as wheat beers. In 1516, German Purity Laws went into effect, making barley the only acceptable malt in the brewing of beer. This should have ended the production of Weissbiers. Luckily, German nobility allowed brewers to continue brewing Weissbiers in exchange for large bribes.  Weissbier has grown in popularity since World War II, and sales now rival those of Bavarian lager brews.

Style: Wheat Beer
Hops: Tettnang (DE), Hallertau Tradition (DE)
Malts: 2-row malted barley, wheat malt, Munich malt, flaked wheat
Yeast:  Bavarian Weiss
Availability: 12oz bottles, Draft.

4.9% ABV, 19 IBUs

Schlafly Partners With Backpocket Brewing

Schlafly Brewing (St. Louis, MO) is expanding.  In order to do so, they are partnering with a new brewery in Iowa called Backpocket Brewery.  The construction of the 25,000 barrel brewery will begin soon.  The brewing activities will be headed up by Jacob Simmons, a previous employee of Schlafy from 2006-2007.

The new Backpocket brewery will share characteristics with the Schlafly Bottleworks brewery.  They will have a beautiful 30 bbl brewhouse, fermentation vessels of similar design, and state of the art bottling equipment.  Jacob has really done a great job to get the brewery designed and the project moving forward.

….To uphold the high standards of our beer quality, Schlafly will recruit a new team member. Working for the quality assurance team, this Iowa-based employee will also promote beer in the area. This is a very exciting time for us at Schlafly Beer and we look forward to meeting lots of new friends in Iowa for years to come.

The partnership will allow Schlafly to grow more in the midwest.  It is also important to note, that Schlafly will have no ownership state in Backpocket Brewing.  The facility is scheduled for completion in summer, 2012.  [Schlafly]

Just recently, Schlafly also announced a Tennessee partnership with Blackstone Brewing.  Blackstone will be brewing beer for Schlafly later in 2011.

Schlafly’s 1.4 Million Bottles in 3 Days

O-I is the glass manufacturer for Schlafly Brewing (St. Louis, MO). The brewery – born in 1991, is celebrating 20 years by embossing the shoulders of their bottles for the first time.

Last summer the brewery was looking a glass contract, and opted to add to the bottle design a bit.  The sheer amount of bottles is produced with the new letters in 3 days by O-I in Lapel, Indiana is staggering – 1.4 million.  Mind boggling.

Dan Kopman, C0-Founder:

This is a subtle and simple addition, we did not want to change the label designs or overall appearance in a dramatic way.  Knowing that we were entering our 20th year we decided it would be groovy to add “EST 1991” to the bottle. We also found room to add an arc of the “SCHLAFLY” letters to the design.

New bottles will appear a little laster this year.  Check out the video below taken from the 3-day production at O-I

VID: Beer Stimulus Bill Discussion on Fox & Friends

The “Beer Stimulus Bill” (H.R. 4278) was introduced last session of Congress, and was not acted on.  It will be introduced again this session.  Today, Nick Matt of FX Matt Brewing, Leslie Henderson of Lazy Magnolia Brewing, & Dan Kopman of Schlafly Brewing appeared on Fox & Friends to discuss the bill benefits.

Talking Points:
– Beer is heavily taxed by the U.S. Government ( Excise tax pre-sale, Retail)
– Small brewing employs 1 person per 1,000 barrels. ( 1 per 50,000 barrels macro)
– Small brewing makes 5% of the beer, employes 50% of the people
– Small Brewing has created 100,000 jobs in last 25 years
– The Beer Stimulus Bill would create more industry jobs
