Earlier in the year Jester King added several hundred pounds of raspberries to oak barrels already containing a mature sour beer and than allowed it to re-ferment. The end result is the new Atrial Rubicite, their first barrel aged sour beer containing fruit. This beer is unfiltered, unpasteurized, and 100% bottle conditioned. Speaking of bottles, this is Jester King’s first beer to be packaged exclusivingly in 500 mL bottles. Jester King says this won’t be their last sour featuring fruit and in time they hope to develop a robust program of barrel aged sour beers with fruit.
